To build texture and complexity the Estate Bacchus was 82% fermented in stainless steel and 18% in neutral Burgundy barrels with periodic lees stirring. Delicate and floral with flavours of ripe orchard fruits and spring blossom. The palate is full, with very subtle influence from the neutral barrels, supporting flavours of juicy nectarine and red apple skin.
